  • Number of people: 4
  • Preparation time: 45 minutes
  • Cooking time: 45 minutes

The ingredients:

  • 3 yellow bell peppers
  • 3 round zucchini
  • 3 large onions
  • 3 large tomatoes
  • 250 g minced meat (beef, veal and/or pork)
  • 3 garlic cloves
  • 1 bunch of parsley and basil
  • 1 tbsp breadcrumbs
  • 4 pinches of herbs of Provence
  • 20 cl vegetable broth
  • 40 g black olives
  • 3 thyme sprigs and 2 rosemary sprigs

The steps to follow:

  • Start by washing the vegetables because we will preserve the skin. Cut the vegetables to 2 thirds of the height, keep the small caps. Drain the vegetables and pour their flesh into a blender to chop them.
  • Blanch the onions for 5 minutes in boiling water to make them easier to digest.
  • In a salad bowl, combine all the ingredients for the filling: meat, breadcrumbs, pressed garlic, chopped parsley and basil, herbs, then salt and pepper. Mix well to obtain a homogeneous filling.
  • Preheat the oven to 180°C. Meanwhile, stuff the vegetables and place them on the grill pan. Place the little vegetable caps, we don't throw anything away! Finally, drizzle with olive oil, add the olives, thyme, rosemary and pour the broth into the bottom of the grill pan. Put in the oven!

Recipe 2: Peppers Stuffed with Spices

  • Number of people: 4
  • Preparation time: 45 minutes
  • Cooking time: 35 minutes

The ingredients:

  • 4 large red bell peppers
  • 2 tbsp olive oil
  • 3sliced onions
  • 1 tbsp of ginger paste or grated ginger, 1 tbsp of garlic paste or 4 crushed candied garlic
  • 1 tbsp chili powder,1 tbsp cumin powder
  • 1 tbsp coriander powder, 1 tbsp turmeric powder
  • 3 tomatoes cut into cubes
  • 800g of beef
  • A few mint leaves
  • A few coriander leaves
  • 1 chopped green pepper
  • 200 g grated mozzarella cheese
  • 2 tbsp tomato paste
  • Salt/pepper

The steps to follow:

  • Heat the oil in a frying pan. Fry the finely chopped onions over low heat until translucent.
  • Remove half of the onions and set them aside.The rest of the onions should be fried until golden brown.
  • Add to the pan the ginger, garlic,chili, cumin and salt and pepper.
  • Then add the tomatoes cut into pieces into the mixture and cook until they are well softened.
  • Pour the ground beef into the skillet.Cook for 10 to 15 minutes on high heat.
  • Add a little water, mix and cook on low heat with the lid closed
  • Add the remaining half of the eggsnot as well as coriander and mint leaves, chopped green chilies and spices.
  • Cut the bell peppers in half lengthwise and remove the seeds and the white part.
  • Fill the bell pepper halves with the filling and then top with the cheese.
  • Bake in the oven for 35 minutes at 180° degrees
  • Add the chopped parsley at the end of cooking for the final touch. It's ready! You can serve them with a crudity salad to balance the dish and a portion of quinoa.

Do I have to cook bell peppers before I stuff them?

Especially not, if you cook the peppers first, they will lose their structure and soften. It will be impossible to fill them with pranks afterwards. The bell peppers are therefore filled with raw bell peppers.
