How do you cut green onions (spring onions) properly?

Green onions, also called spring onions, appear in many Asian recipes and salads, but their thin, elongated shape can be intimidating when you cut them. Is there a simple and effective method?
Unlike traditional onions, spring onions do not require complex peeling or special techniques: a few steps are enough to use them cleanly and quickly.

Here's how to prepare and cut green onions, step by step.
Preparing the green onions
Before cutting, remove therootsat the base of the white bulb, as well as the thin outer film if it is damaged or dried out. It is generally not necessary to peel more: unlike yellow onions, spring onions can be cooked with their thin skin. Then simply rinse the stems under cold water to remove any traces of soil, then dry them well.
The basic technique
Lay the stems flat on a cutting board, in a good line. Using a sharp knife, cut them intothin slices, holding the grouped stems with one hand and sliding the blade with the other. For regular slices, keep constant pressure and move your hand holding the onions forward as you go.
For a more decorative, beveled cut, angle the knife slightly to the shaft rather than cutting perpendicularly.
Separate white and green according to use
Thewhite, firmer and more spicy, supports cooking well: it is often returned at the beginning of preparation, like a classic onion but with a milder taste. Theunripe, more tender and more fragrant, is generally added raw or at the very end of cooking, as a garnish, to preserve its color and freshness. It is therefore useful to cut the two parts separately if the recipe distinguishes between their uses.

►Use a sharp knife
A blunt blade crushes thin stems instead of slicing them, which damages the texture and releases too much juice.
►Cut the green part just before serving
The green spring onion quickly loses its freshness once cut: it is better to prepare it at the last moment.
►Save the roots to regrow them
Placed in a glass of water near a window, bases with roots can grow back and give new stems for a few weeks.
Cutting green onions does not require complex techniques: a sharp knife and a few guidelines are enough to prepare them properly.
