  • 125 g minced pork and125 g ground beef
  • 150 g cooked peas
  • 1 bunch of parsley
  • 100 g fine breadcrumbs, 2 eggs and 100 g flour
  • 1 dose of saffron, pepper and salt
  • 500 g of Arborio rice
  • 10 cl white wine
  • 50 g freshly grated parmesan

The steps to follow:

  • Preparing the stuffing:Cut the onion, carrot and celery into small cubes and fry them in a pan in olive oil. Cook until the onion is translucent. Now add the minced meat and stir-fry until cooked. Add the white wine to the mixture, stir continuously until the liquid halves its volume. Add one by one, mixing the tomato paste, peas, tomato coulis, broth and finally half of the finely chopped parsley, salt and pepper. Maintain medium heat until thick consistency is reached.
