How do you make homemade celery juice in a blender?
by Karine Lemoine
Celery juice is prepared very simply at home, without a specific juice extractor: a conventional blender and a fine strainer are sufficient.
The technique requires a bit of method to obtain liquid juice, without the fibers that normally get stuck in the teeth.

Here's how to do it, from choosing branches to filtering the juice.
Choosing and preparing celery
Branch celery (celery stalks, to be distinguished from celeriac) is suitable for this preparation. Choose firm, stain-free branches and wash them thoroughly, including the leaves, which can be mixed with the rest.
Cut the branches into pieces of a few centimeters to make it easier for the blender blades to work.
Blending in a blender
Place the celery pieces in the blender. Celery is composed of more than 90% water, which allows it to be mixed without necessarily adding liquid, even ifA little bit of water makes it easier to start the bladesand gives a more fluid juice.
Blend at full power for one to two minutes, until you get a liquid texture with well-detached fibers, without large pieces left.
Filter to obtain a liquid juice
Pour the mixed mixture into a fine sieve, a strainer, or a vegetable milk bag, placed over a container. Press with the back of a spoon or with your hands to extract as much liquid as possible, leaving the fibers in the strainer.
The result is a clear, slightly cloudy juice with a vegetable and slightly salty flavor, characteristic of celery.
What's in celery
Celery is a low-calorie vegetable, largely composed of water, which provides vitamin K, potassium and some fiber in particular. In juice, most of the fibers are removed during filtration, which mainly concentrates the water and the vegetable's soluble compounds.
Our tips
►Drink the juice quickly after preparation
Like any fresh unpasteurized juice, it can be stored for a short time and loses its freshness if left in the air for several hours. A quick passage in the refrigerator, in a closed container, limits this loss.
►Save filtered fibers for other recipes
Celery pulp collected in the strainer can be added to salty soup, broth, or muffin batter, rather than discarded.
►Adjust the texture with a little bit of water
If the juice obtained is too concentrated or bitter, a small amount of water added before filtration softens the taste.
A blender, celery stalks and a fine sieve are enough to prepare homemade celery juice, preferably to be consumed quickly after preparation.
