How much water to cook basmati rice

Basmati rice has a reputation for being finicky: too much water and it gets sticky, not enough and it stays hard in the center.

However, a single rule of proportion is enough to cook successfully each time, provided you respect it carefully.

How much water to cook basmati rice

Here is the reference water-rice ratio for basmati, why it differs from round rice, and how to adjust depending on the rinse.


The reference ratio

For the absorption method, the classical proportion is1 part basmati rice for 1.5 parts water. For example, for 200 ml of rice, count 300 ml of water. This quantity allows the water to be fully absorbed at the end of cooking, without the need to drain the rice.


Why does basmati require less water than round rice

Basmati is a long-grain rice that is less rich in starch than the round rice used for risottos or rice pudding.It therefore absorbs less water proportionallyand swells in length rather than in overall volume. This is what gives it its fine, loose and slightly fragrant grains once cooked.


Rinsing and soaking: an impact on the quantity of water

Rinsing rice before cooking removes some of the surface starch, which slightly reduces the need for water. If you rinse your basmati thoroughly until the water stays clear, you can go down to a ratio of1 volume of rice for 1.25 volume of water. Soaking for 15 to 30 minutes beforehand has the same effect and also shortens cooking time.


Our tips

►Always measure with the same container

Use the same measuring cup or measuring cup for rice and for water. It's the volume ratio that counts, not the exact unit used.

►Let it rest under cover off the heat

Once the water is absorbed, turn off the heat and let the rice sit for 5 to 10 minutes covered without touching it. The remaining steam finishes cooking and results in lighter grains.

►Avoid lifting the lid during cooking

Each opening lets steam out, which upsets the water-rice balance and can dry out the bottom of the pot.


In summary, count about 1.5 volumes of water for 1 volume of basmati, adjusting slightly depending on whether or not you rinse the rice before cooking.
