How do you clean a deep fryer

A poorly maintained fryer ages quickly: oil gets dirty, odors get stuck and the result of frying is affected. Regular cleaning, much more than an occasional major cleaning, is what really extends the life of the appliance.

Between the oil to be managed, the tank to be washed and the resistance to never get wet, each part requires a different method.

Here's how to clean a deep fryer step by step, and how to know when to change the oil.

Manage oil before cleaning

The oil should always be allowed to cool completely before handling the fryer to avoid any risk of burns. Once cold, the oil can be filtered with a fine strainer or coffee filter to remove food particles, if it is still reusable.

An oil that has become dark, foamy, smokes at low temperatures or has a rancid odor should be changed, even if it looks clean visually. It never goes down the sink: once cooled, it is poured into its original container or a closed container, to be dropped off at a waste disposal center or collection point.

Wash the tub and basket

Once the oil is removed, the tank and basket can be washed in hot soapy water. On fryers with a removable tank, it is often possible to go in the dishwasher, provided you check the manufacturer's instructions. For fatty deposits embedded at the bottom, pre-soaking in hot water makes cleaning much easier.

The frying basket, often made of chromed metal, must be rinsed and dried carefully to avoid traces of lime or rust in the long term.

The resistance and the electrical elements

On a fryer whose heating element is immersed in oil and remains attached to the lid or to the control unit, this part should never be immersed in water. It can be cleaned with a slightly damp cloth or sponge, gently wiping away dried fat deposits.

The electric control unit, thermostat and cord included, can only be wiped with a dry or damp cloth, never put under running water.

Our tips

►Filter the oil after each use

A simple pass through a fine sieve, once the oil has cooled, removes food residues that accelerate its oxidation and prolong its life of use.

►Watch for signs of tired oil

Dark color, persistent foam, early smoke, or unpleasant odor are the signals that indicate that it is time to change the oil, regardless of the number of uses.

►Never wet the resistor

On models where the resistor is attached to the lid, cleaning with a damp cloth, without immersion, is the only safe method to preserve the electrical part.

By filtering the oil regularly and respecting the electrical parts that should never be wet, a fryer stays clean and safe much longer.
