Less well known than fresh oysters, canned oysters (often smoked or in oil) nevertheless have their place in practical cooking: they keep for a long time and are easy to cook.
Their shelf life changes a lot depending on whether they are open or not, which is worth clarifying.

Here's how long they last before and after opening, and some simple ideas for using them in the kitchen.
Before opening
An unopened oyster can, stored in a dry place and at moderate room temperature, generally keeps 2 to 4 years from the time it was made, like most canned fish and seafood. It's helpful to check the deadline on the package rather than relying solely on this general estimate.
A box that is curved, dented in depth, or that leaks liquid should never be opened or consumed, regardless of the date indicated.These signs may indicate serious bacterial contamination.
After opening
Once opened, canned oysters behave like any fresh product: they should be transferred to an airtight container (ideally not in the metal box itself) and stored in the refrigerator. They can then be kept for 3 to 4 days, in their juice or preservative oil.
If an unusual odor, slimy texture, or a strange taste appears before this time, it is best not to consume them.
How do you cook them?
Canned oysters are already cooked: they can therefore be eaten as they are, drained, as an aperitif on a slice of toast. They are also ideal for quick hot preparations: mixed with pasta with a little garlic and parsley, added to a sauce to accompany rice, or incorporated into a filling for a savory pie or au gratin. Their smoky taste goes particularly well with simple ingredients such as butter, lemon or shallots.

Prolonged contact with the metal in an open can alter the taste and accelerate degradation. A closed glass or plastic food container is best for keeping in the fridge.
►Do not always throw away preservative liquid
The oil or juice that oysters are soaked in is often flavorful and can flavor a sauce or dressing, as long as you don't leave them too long after the can is opened.
►Warm them gently, without annealing them for a long time
As they are already cooked, all you have to do is heat them up for a few minutes on low heat. Cooking for too long would make them firm and rubbery.
