Winter Soup: Cabbage Soup

Let's travel with a typical dish from Northern Portugal: Caldo Verde, a green cabbage soup served with chorizo.

I was inspired by this delicious soup to make this recipe. Some prefer liquid soup, others rather creamy, it is rather textured and it sticks well to the body.

It is a real pleasure when someone asks you for another ladle at the table because we are enjoying ourselves. I invite you in turn to discover this recipe for green cabbage soup and to share it.

It is a winter soup as we like that warms us and brings us comfort.

Caldo Verde recipes can vary from one family to another, I saw the whole chorizo directly dipped into the soup and that brings a real flavor to the soup. Here in the recipe, the chorizo wasMade into chipsand put on top with croutons to provide lamb's lettuce.

Recipe tested and approved by family and friends

The ingredients:

  • 250 g green cabbage
  • 2 medium onions
  • 3 garlic cloves
  • 1 egg yolk
  • 4 tbsp of milk
  • salt/pepper
  • olive oil
  • a few slices of chorizo

The steps to follow:

1.Peel the potatoes, cut them finely into 1cm slices and cook them in water or steam for about fifteen minutes.

2.Chop the 2 onions into strips. Fry the onions over low heat in a stewpot with a little bit of olive oil, stirring them from time to time. The onions should be translucent. Add the 3 cloves of garlic as well.

3.Cut the green cabbage into strips, rinse it and add it to the mixture. Mix well then cover with a liter of water.

At this stage of the recipe, you can introduce a piece of chorizo into the preparation for more taste and delicacy, just like you put bacon in a stew.

Here, I chose to add chorizo as a topping on top of the soup.

4.Your potatoes are cooked, mash them in a salad bowl then add the egg yolk and milk. Mix so that it is homogeneous then add to the soup to cook for another ten minutes.

The little trick: We cover the soup with a lid in order to capture all the flavors of the dish. If you heat without a lid, odors will spread throughout the kitchen.

5.All you have to do is mix the soup and it's ready!

The little trick:For more lamb's lettuce and indulgence, you can add coarsely diced bread croutons with chorizo chips.
To make chorizo chips, simply cut slices and toast them in the oven for 5-10 minutes at 200° between 2 sheets of greaseproof paper.
